Cheese and jam cookies

These cookies are slightly sweet yet savoury which makes it very easy to stuff as many as possible in your mouth. They are my sister Melissa's favourite cookies and usually vanish faster than I can get them out of the oven.


Cheese and jam cookies
Makes about 50 cookies

500 ml cake flour
2 ml salt
1 ml baking powder
250 g Cheddar cheese, finely grated
250 g margarine at room temperature
100 ml smooth apricot jam

Preheat the oven to 200 degrees.

Sift together the dry ingredients. Add the cheese and margarine. Mix until the mixture forms a dough that resembles breadcrumbs. I find that it is easier to use your hands when mixing. Roll the dough into small balls and arrange on a baking sheet.

Using the back of a wooden spoon, make a hole in the middle of each ball and fill with jam. Bake for 15 minutes. Allow to cool and enjoy.
