Chicken quesadilla

I love Mexican food and one of the easiest Mexican dishes you can make in almost no time at all is quesadillas. Chicken, cheese, guacamole, what's not to love?


Chicken quesadilla
Makes 1 quesadilla

2 flour tortillas
1 chicken breast, sliced into small pieces
1 tbsp Canola or vegetable oil
½ tsp chicken spice
½ tsp crushed garlic
¼ tsp cayenne pepper
½ cup of cheddar cheese, grated
½ cup of mozzarella

Mix the chicken, oil and spices and allow to marinade for half an hour in the fridge. Remove from the fridge and fry in a pan.

Put half of the cheese on one of the tortillas and distribute the chicken pieces evenly. Top with the remaining cheese and cover with the other tortilla. The cheese is the glue that will keep the two tortillas together, so don't be shy!

Toast in a clean, dry pan until the tortillas are toasted and the cheese has melted. Serve with guacamole and salsa.
